Introduction

Kielbasa is a delicious polish sausage and can be made from scratch. My brother-in-law, Jim, made some recently on his Pit Boss smoker! We decided to use it to make an awesome sandwich with french bread, sweet onion horseradish spread, Killer Hogs BBQ sauce, horseradish mustard and caramelized (tobacco) onions. It was rich and SO flavorful. You gotta try this recipe!!!

We meant to make this on my Blackstone griddle, but unfortunately couldn't due to inclement weather. It could be made easily with an indoor griddle like we did, on the stove, or in the oven.

Hey and welcome back to baines bites, I'm baden.

So today we've got a new bane's buddy and one of my favorites in the whole wide world.

We've got my brother-in-law and one of my best friends in the world jim.

How you doing today bud I'm good you I'm doing well all right so for having me so today, we're actually going to be using some homemade kielbasa we're going to make some smoked sausage po boys.

But what makes it special is.

This kielbasa was made by this guy right here, so polish kibasa is either served to one of two ways fresh or smoked.

In this case we may smoked kabasa.

The ingredients consist of salt, pepper, garlic, marjoram mustard seed, a few other things, so we start by by grinding the kibasa and uh and then adding the spices the cure and then casing it with a natural hog casing, and then that kombucha goes in the refrigerator for 24 hours before it gets put on the smoker uh.

It's smoked to 150 degrees, so that we don't melt out all the all fat from the pork and then we let it bloom.

So it hangs for about another two hours after it pulls after we pull out the smoker and it blooms and that's what gives us its red, this red color and that's what we have here.

So I took this and I came up with an idea.

I wanted to make an awesome po boy out of it and we're going to do that today.

I'm looking forward to it sounds good.

It's going to be great so for the last hour and a half ish, maybe two hours- I don't know the nephews have been running it down.

Finally, we finally got him down, but uh we've been caramelizing, some onions and they're just about where I want them.

They're.

Looking incredible we'll get to that in a second we're gonna get these sliced up, we're gonna, start searing them and cooking them off on both sides.

Get a good crisp.

We're gonna, lay down a base of some awesome: sweet onion, horseradish spread sauce.

I don't know.

We've got some horseradish mustard to kind of tie that in we got two french loaves, we're gonna kind of trim up slice in half, we'll toast them off.

Get the sausage cooked get some caramelized onions on top with some mustard and a good spread at the base and we're gonna enjoy I'm hungry.

Let's kick this pig, so we took our french bread cut the ends off butterflied them.

In half we put just a little bit of mayo down we're gonna, throw them down on our griddler.

So this is either an indoor griddle.

You flip it over it's a good panini press, but we've got it set for griddle we're going to take our bread and just lay it down flat.

Just like this and get it good and toasty and crispy we'll get a good golden brown crust there on the inside.

So we got our bread.

Good and crispy got a golden color on it.

We're gonna hit our griddle with a little bit of avocado oil.

We're gonna, take our kielbasa, we're gonna start with the rounded edge we're gonna, lay these down and start to get a good crisp on them.

We're starting to get crust on the outside.

Looking good.

So we're going to flip these over and get the main side that we sliced open back on top and we'll get a good brown on top of there.

So, even though I'm not outside on my blackstone, I still took my burger press just to make sure they get a good, even sear, and while we're waiting for these to finish up jim's grabbing that sweet onion horseradish spread that we found at the store and he's just putting a spread on the bottom and the top of the buns all right, it looks like we're set up for success.

We've got our spread down.

We crisped up our kielbasa.

We've got our caramelized onions ready to go.

We got everything going, let's uh, let's shut off this griddler and build them up, see how we did go for it.

It smells so good.

So we're going to lay down both of our pieces of kielbasa.

Now that we've got our sausage down we're going to grab our caramelized onions and we've been running these for about an hour and a half, you can see that we started them as thin sliced onions.

We cooked them down low and slow waited a little while, so they started to cook out some juice.

Then we added a little bit of that seasoning that we found at the melting pot.

It's an awesome, garlic wine seasoning we kept stirring them every 10 or 15 minutes, cooking them low and slow.

They went from yellow sweet onions down to almost a tobacco color they're super sweet.

They smell amazing and we're gonna load these up on top of the sandwich and give it a good sweet depth of flavor.

They almost have a jammy consistency, so I think so far we're doing pretty good.

You even said you're, not a you're, not a huge fan of onions, but cook like this.

I I took a sample and uh I'm a fan.

So the last thing we're going to do to finish these off is like I said: we've got some horseradish mustard.

It's got just a little bit of kick to it.

Tie in that horseradish spread.

We have so we're going to get a nice little thin layer down across here, not too much, but just enough to give it a little bit of punch little dollops here and there don't want to overpower it, but want to add a little bit of goodness.

The final step in the cuda garage just a little bit of killer hogs, the barbecue sauce we're going to put a really thin bead right here on the edge and just lay it across to kind of give it another layer of smoky and sweet just a little bit, nothing crazy! Uh! We are talking one awesome, sausage, po boy, so we've got it all built out.

It smells incredible.

It looks amazing, last step, we're gonna, take that crown flip it over lay it down and slice this in half.

So I get one and you get one, and I tell you what I can't wait much longer.

It's just about time.

We're gonna dive into this thing and do some serious work.

Well, the rain brought us in so we're cooking inside we're making it work.

You could do this in a pan.

You could do it in the oven, it doesn't really matter.

You could do it on the black stone which I wanted to do.

But I'll tell you what your kielbasa sausage is awesome.

We worked this into a masterpiece and I'm done talking.

I'll tell you that that sausage is great by itself but yeah, I'm gonna! Why don't you tell me he can't even talk.

He never seen something like this I'll go ahead and narrate, while he so impolitely digs in again, it's too good I'm trying to resist.

This is a winner.

The onions are really sweet.

Just a little bit of that horseradish from the spread and from the mustard really works, the barbecue just kind of pulls it all together in a texas style, the bread is soft.

It's crispy, that's good! That's it y'all need to try this one y'all need to try this one.

It's really easy! The hardest thing are the onions and the onions.
